I Am Obsessed With These Monster Cookies!

Monster Cookies

I had no idea about Monster Cookies until a few months back, I was over seeing my nieces and sister, and she had made some and asked if I wanted one. I was a little hesitant on if I would like them or not! I have been seriously missing out, these cookies are so good! They are a nice twist to a cookie, and I love the M&M’s and chocolate chips mixed in the cookies!

I had told myself if I passed my glucose tolerance test for gestational diabetes, I would make some to celebrate! Haha, living on the wild side, I know! I passed with flying colors, so I kept my word and whipped these up! I gave some to my sister, as a thank you for introducing them to me, and then I put the rest in the freezer, so when I feel like a cookie I can pull one or two out and enjoy it!

If you have never had a monster cookie, they are really good. They have oatmeal, peanut butter, M&M’s, and chocolate chips in them. It is a fun variety of flavors mixed together, which makes them so good, in my opinion.

Monster Cookies

2 Cups All Purpose Flour

1 1/2 cups Quick Oats

1 tsp baking soda

1/8 tsp salt

1 Cup Brown Sugar

1/2 Cup Granulated Sugar

1/2 Cup Peanut Butter (Feel free to use creamy or crunchy, whichever you prefer)

1 Egg

1 Egg Yolk

3/4 Cup Softened Butter (I prefer butter over margarine)

1 tsp vanilla

1 Cup Milk Chocolate Chips

1 Cup M&M’s + Some extra for topping them

How to Make:

1. First preheat oven to 350 degrees. Next take a small bowl, combined the flour, oats, and baking soda and salt together and set aside.

2. Then in my KitchenAid Stand Mixer (you can use a hand mixer or spatula) I added the softened butter and peanut butter together. I mixed them till they were pretty smooth.

3. Next I added in the brown sugar, and granulated sugar. Once that was well incorporated, I added in the whole egg and the egg yolk and vanilla.

4. Next I slowly added the flour and oat mixture, until well combined.

5. Then with a spatula I folded in the chocolate chips and M&M’s.

6. Then I put the dough into balls and placed on greased cookie sheet. I then took some extra M&M’s I had and placed a few on top of each cookie, just to add some dimension to the cookies. That is optional, you don’t have to do this part.

7. Bake cookies for around 8-10 minutes or until they are light brown. If you prefer a softer cookie bake less, or a crunchier cookie bake a little longer. Just go with how you normally prefer your cookies.

Note: Depending on where you live and the altitude your baking time could vary. Or you can adjust the temperature, this is what works for me where I live.

Monster Cookies

These are pretty easy to make and really amazing. Best of all they freeze great, so if you are like me, eat them whenever you get a craving, just set a few out and let thaw for a little bit then enjoy!

2. Whip heavy cream until it begins to peak. Add powdered sugar and continue to whip.  Add mint

and 6-10 drops food coloring and continue to whip until peaks form. Place in refrigerator.

Mint Oreo Trifle3. Chop approximately ¾ of the Oreos and scatter into bottom of the plastic cup. Top with about 1/4 cup chocolate pudding, then add another small amount of Oreo topping. Top with whipped cream mixture.

Mint Oreo TrifleNote: If you happen to not like mint you can opt out of the mint ingredients and use vanilla instead.

Plus you can sprinkle some Oreo crumbs on top, or even place part of a cookie. You can decorate how you would like! Again this is a super easy dessert that is SO delicious! I am a huge fan of desserts like this, and you can’t go wrong with an Oreo! Affordable and tasty are two of my favorite things! This Mint Oreo Trifle, is so good. Quick & Easy No-Bake Valentine’s Day Dipped Wafer Cookies (3 Ingredients!)

Valentine's Day Dipped Wafer Cookies

Can you believe Valentine’s Day is just a little while from now! I thought I would share a really easy No-Bake Valentine’s Day Dipped Wafer Cookies. Just 3 Ingredients, and they are very affordable to make! These would be fun for school Valentine’s Day parties, treats for after school, or gifts for friends and neighbors. Or if you are like me, enjoy a few of them for yourself!

Valentine's Day Dipped Wafer Cookies

They are fun to make and you can go crazy if you want and get a bunch of different sprinkles to use, and you can choose any wafers you want. I picked the chocolate and strawberry ones to make it more Valentine’s Day inspired!

Really it isn’t a recipe at all, but hey, it is a fun idea and I thought I would share it with you guys! More of like an inspirational idea with a guide on how to make them!

Valentine's Day Dipped Wafer Cookies

White Almond Bark (or you can use other melting chocolate of your preference)

Wafer Cookies – I used Chocolate and Strawberry

Sprinkles of your choice

How to Make:

1. First off melt your chocolate. I prefer almond bark because it hardens up really nicely. If you use white chocolate chips you will have to add shortening in it, so that it hardens after awhile.

2. Next take your wafer and dip half the cookie into the white chocolate. Then lay on wax paper and immediately sprinkle some of your sprinkles on top. If you wait the chocolate will harden and sprinkles won’t stick.

That is it, serve and enjoy! You can also put these in a fun tin, or wrap in a treat bag to make these look fun to give as a gift! Enjoy!

Do these look like a tasty treat you would enjoy?!
