Cucumber Salsa Recipe

If you’re looking for something to make with all those extra cucumbers and tomatoes from your garden, make this amazing Fresh Cucumber Salsa!

Our daycare provider sent home an entire bag of fresh cucumbers and we had no idea what we were going to do with that many!

Our garden is really producing a ton of ripe red tomatoes, so I thought it’s the perfect time of year for some Fresh Cucumber Salsa.

Cucumbers and Tomatoes

The recipe I typically use is a cucumber salsa with Rotel recipe and doesn’t call for fresh tomatoes.

Since we had the fresh tomatoes available AND we love them so much, we used the garden tomatoes in place of a second can of Rotel tomatoes.

The recipe also calls for dry ranch dressing packets, like Hidden Valley. You can make this even more homemade and even save a little money with this easy recipe to make your own dry ranch dressing mix.

Our household isn’t a fan of cilantro, so I usually don’t add it. You can make little adjustments to perfect the recipe to your tastes. So, add in that cilantro if you like it or add some diced red onion.  

This Fresh Cucumber Salsa has just enough of a little kick to it, but you could always make it spicier if you prefer. Just use Hot Rotel Tomatoes instead of Original or throw in a few dashes of your favorite hot sauce.

My husband and I tend to disagree on how spicy some of our foods should be! He wants it to burn your nose hairs and I am much more conservative. Play with the flavors and spice level to see what works best for you.

Even kids like this salsa with fresh cucumbers and tomatoes! At least mine do anyway.  As I was taking photos, Haydyn kept taking chips and reaching into the dip!

It was really funny and I just happened to capture her little hand reaching in for some of that fresh salsa from the garden.

Homemade Cucumber Salsa Recipe

Cucumber Salsa Ingredients

  • Cucumbers, diced and without skins
  • Can of Rotel Original (if you don’t want to add fresh tomatoes use 2 cans)
  • Fresh tomatoes
  • Dry ranch dressing packets
  • Apple cider vinegar
  • Fresh cilantro (optional)
  • Jalapeño or hot sauce (optional)

How to make cucumber salsa:

Mix together cucumbers, Rotel, fresh tomatoes, dry ranch dressing and apple cider vinegar.

If using, add in chopped cilantro and/or diced jalapeño or hot sauce.

Serve immediately or refrigerate for a couple of hours to allow flavors to meld.

Serve with tortilla chips, on top of tacos, or any way you love to eat your salsa.

(f you don't want to add fresh tomatoes use 2 cans of Rotel.
