While these salsa bites make the perfect appetizer, I also like to eat them for lunch! With the balance of the Triscuit cracker, the hearty beans and the yummy salsa and cheese on top it gives me everything I need to feel satisfied during the lunch hour. And, while these taste best if heated in the oven or toaster oven, they’re great out of the microwave too! Think of them as a fun lunch option to bring to work.

Super Quick Salsa Bites Appetizer Recipe
Ingredients:
Triscuit Crackers
Refried Beans
Salsa
Shredded Mexican blend cheese
Cilantro (optional)
Directions:
Lay out the Triscuit in a single layer on a baking sheet. On each, place a dollop of refried beans, followed by a dab of salsa. (You don’t need much salsa since the crackers are so flavorful.) Top each with shredded cheese and a sprinkle of cilantro (optional). Place under broiler until cheese is melted.
See, isn’t that easy!! To make party time even simpler, you can assemble the bites ahead of time and keep in the fridge until your guests arrive. At that time, just take them out and pop in the oven!
