With pretty pink icing, these cookies are perfect for Valentine’s Day or any spring holiday. To change things up for another holiday, just change the icing color!

Ingredients:

Meltaway Almond Cookies ingredients

Cookie Ingredients:

2 cups all-purpose flour
1 large egg (room temperature)
1 cup room temperature margarine (can use butter)
½ tsp baking powder
¼ tsp salt
¾ cup granulated sugar
1 ½ tsp almond extract

Icing Ingredients:

1 cup powdered sugar
1 TBS milk (can use water)
1 ½ tsp almond extract
Red Food coloring (optional)

How to make Meltaway Almond Cookies:

Preheat your oven to 375 degrees. Then in a bowl combine the butter, granulated sugar, and eggs together. Mix until light and add in your almond extract.

In a small bowl you can put your flour, baking powder and salt in it. Then ½ a cup at a time add to your wet mixture. Mix until well incorporated.

Roll into small balls and place on a baking dish. I used a silicone mat to prevent sticking, so if you don’t use one grease the pan with cooking oil. In the center of each ball I kind of push down the cookie a little with my finger, making a little well.

Bake for 8-9 minutes. They will be soft still, put on a cooling rack. Once cookies have cooled for around 5 minutes you can then mix up the icing.

Now you can make the icing, it does harden quickly so don’t make ahead. Combine the powdered sugar, milk and almond extract in a small bowl. Mix well.

Then pour into three separate bowls. If you want to make the icing ombre put one drop of red food coloring in one of the bowls and two drops in another bowl. Leave the third icing white.

Put a little dollop of icing on each cookie, serve and enjoy!
