These simple apple cinnamon muffins are so quick to whip up, and before you know it you are devouring them! I love to make muffins and then freeze them, so I can just grab them here and there. I zap them in the microwave for a few seconds or let it thaw and it chilled. Either way they are a delicious treat anytime of the day!

I wanted to take a minute and tell you a couple of items that I wish I had when I made these! I just recently starting using silicone cupcake liners and they are to die for! A great alternative to disposable paper baking cups, they can be used again and again. You can put them directly on a baking sheet and bake them, they stand up nicely and are not flimsy! Best of all they clean up so easy, it makes it simple as can be!

These moist apple cinnamon muffins are so awesome, I can’t say it enough! I hope that if you make these you enjoy them! Clay absolutely loves them! I love the nice chunks of apple in them, it really adds a delicious flavor and dimension to the muffins. 
Simple Apple Cinnamon Muffins – Moist and Delicious


  • 1 large apple finely chopped apples (about 1 cup to 1 1/2 cups)
  • ⅓ cup coconut oil
  • 1 cup milk (room temperature.
  • 2 teaspoons white vinegar
  • ⅓ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • 1½ cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1/2 teaspoon cinnamon


  1. Preheat oven to 350 degrees. First off you want to warm up the coconut oil so that it is melted.
  2. Then in a large bowl, mix your softened coconut oil, milk, vinegar, brown sugar, vanilla and egg.
  3. Once well combined, add in your flours, baking soda and baking powder, cinnamon and salt.
  4. When it is well combined, slowly fold in your diced apples.
  5. Spoon into baking cups and bake for about 12-15 minutes. Depending on your oven time will vary. Stick a toothpick in and when it comes out clean they are done.

3 Ingredient Banana BreadI am a HUGE fan of Banana bread
, it is something I have always loved! I had bought some bananas and didn’t get them all ate up and I thought, perfect timing for some banana bread. When skimming through Pinterest awhile back I saw this recipe. It is a 3 ingredient banana bread, so I didn’t write it down as I knew I could remember how to make it! I have to say for using a store bought cake mix, this still taste like homemade banana bread. I will admit I was a bit leary of how it would taste, but I am pleasantly surprised!

When making banana bread I normally whip up this walnut banana bread, that is absolutely delicious!

Banana BreadYou can also decide to add nuts into the bread or even chocolate chips, granted it won’t be 3 ingredient banana bread after that, but still super easy to make! I whipped out my KitchenAid Stand Mixer and in minutes I had this ready to go in the oven, and before I knew it, fresh delicious bread waiting to be devoured!

3 Ingredient Banana Bread – Super Affordable and Easy to Whip Up!


  • 3-4 Ripe Bananas
  • 1 Box of Yellow Cake Mix (whatever brand you prefer, I bought this cause it was on sale)
  • 2 Eggs
  • Optional: You can add chocolate chips or nuts into bread if you want.


  1. Take your bananas and mash them up. I used myKitchenAid Stand Mixer but you can use a fork and smash them up really well.
  2. Next add in your eggs and beat till well mixed.
  3. Slowly add in the cake mix, and mix until well incorporated. Pour into a greased bread pan. This made one loaf for me, if you have smaller pans you could make two.
  4. Bake at 350 degrees for 40-50 minutes. Depending on where you live and your oven the time may vary. So you need to watch that it is golden brown on top, and when you stick a toothpick in it comes out clean.
  5. Note: You do not add the oil and other ingredients that it says on the back of the cake mix. It is truly just 3 ingredients like listed above.

Homemade Bread Rolls Using A KitchenAid Mixer

Homemade Bread Rolls

Bread is something I have always loved, it is such a comfort food to me. I am still working on mastering how to make homemade bread and rolls. Getting the perfect texture is something I think takes practice. So, I have started trying my best to create nice and fluffy bread rolls. I have a KitchenAid Mixer that I use, and I think it is a bit different using it then making it by hand. It does a lot of the work for you, so their is no need to knead it by hand, which is so nice!

Here is the recipe that I have to create these nice homemade bread rolls using a KitchenAid Mixer. Now if you don’t have a KitchenAid you can mix by hand and knead like you would normally.

Homemade Bread Rolls Using KitchenAid Mixer


1 package active dry yeast
1 tsp sugar
1/2 cup warm water
3 eggs (room temperature)
3 tbs shortening
2/3 cups sugar 
1/8 tsp salt 
5-6 cups of flour + more when you roll out dough

How to Make: 

1. First off you want to take the warm water, yeast and 1 tsp sugar and pour into a bowl and allow it to activate. It will start to rise and get bubbly when the yeast activates. This should take around 5 minutes. If your yeast doesn’t seem to activate, you could have used to hot of water.
2. While your yeast is rising in another separate bowl, sift your flour and salt.
3. Then in your KitchenAid Bowl cream your shortening and 2/3 cups sugar together. Once this becomes nice and creamy, you will add in your eggs one at a time. Then add your yeast and water mix, and flour. I do a little flour at a time. Once it gets to a nice dough texture, and not to sticky, and turns into a ball, it is time to put into a greased bowl with a towel on top of it. 
4. Let it rise for about 2 hours. Once it is risen, you will want to lay it out on a floured surface and roll out. I took a cup and cut out circles in the dough and placed in a greased pan. 
5. Let your rolls rise again for another 2 hours, and then you can bake. Bake at 425 degrees for around 10-15 minutes. You will need to cook until nice and golden brown, be careful cause these will cook quickly, and if you don’t keep a close eye they will over-cook. 
Note: That depending on where you live, your baking time and temp could vary. 
Bread Roll Recipe

Here is a tip in case you didn’t know. You can use a cup or anything round to cut out perfect circles for the rolls. Just dip your cup in flour and then cut out the dough.
