If you are like me and enjoy Pasta Salads in the Spring and Summer you might be in love this recipe! I am a huge bacon fan, I made another pasta salad that was a BLT Pasta salad that you put on top of Spinach Leaves and it is so good and very popular as well! This recipe is – Bowtie Pasta Salad with Bacon & Tomatoes!
I know probably this Summer we will have lots of nights with fun pasta salad dishes! They are so nice to whip up, and they store so beautifully! Being pregnant sometimes I don’t want to cook up stuff, or should I say have the energy too! With pasta salads and such it is easy, and I can make in morning and be good to go later for supper time!
1 16-ounce box bowtie pasta
1 16-ounce package of bacon
1 large tomato, diced (appx. one cup)
2 green onions, finely sliced
1 cup mayonnaise
1 tablespoon red wine vinegar
salt and pepper to taste
1. Cook pasta according to package directions, rinse in cool water and drain well. Set aside.
2. Chop the bacon in small pieces and brown it in a large skillet. When the bacon is crisp, drain on paper towels and allow to cool.
5. Taste and add salt and pepper to taste. At this point you can also add more mayonnaise and/or vinegar to your liking.
As it sits in the refrigerator, it may absorb some of the dressing, so you may need to add more mayonnaise and/or vinegar before serving.
