Ranch Macaroni Salad

Man it has been so stinking hot here, hitting in high 90’s and even 100 degrees! Summer is in full swing already, and I am all about staying in where it is cool hiding out! I have found being pregnant I get hot so much easier, and it is like I get hotter than I normally do.

I made this Ranch Macaroni Salad today for us to have tonight for supper with our Ham Loaf I get from our local Butcher Block! I just pop the ham loaf in the oven for an hour and dinner will be served. A nice quick and easy meal for us, which I love!

Ranch Macaroni Salad

Here is a recipe for a quick and easy ranch macaroni salad, you might want to try for you and your family! I just put tomatoes and cucumbers with cheese in ours, but you are welcome to put other veggies in it! I just used what we had on hand, and it makes it pretty light and refreshing!

Ranch Macaroni Salad

Here is how to make this delicious salad!

Ingredients: 

10 oz of cooked macaroni shells

1 packet of Ranch seasoning

1 cup mayonnaise

1 Cucumber

3/4 cup tomatoes cut up

1 cup shredded sharp cheese

1/4 cup milk

Other veggies optional

How to Make: 

1. Cook up the pasta like directed on the back of the box.

2. While the pasta is cooking, I cut up my tomatoes and cucumbers.

3. Then I took the mayonnaise and mixed with the packet of ranch in a small bowl, and set aside.

4. Once pasta is cooked and cooled off, add the veggies, cheese, and mayo mix and stir well.

5. Then refrigerate and serve when you are ready!

Note: Now after it sits for awhile you might have to add a little more mayo and mix in, as the pasta might soak it up.

Bowtie Pasta Salad with Bacon & TomatoesIf you are like me and enjoy Pasta Salads in the Spring and Summer you might be in love this recipe! I am a huge bacon fan, I made another pasta salad that was a BLT Pasta salad that you put on top of Spinach Leaves and it is so good and very popular as well! This recipe is – Bowtie Pasta Salad with Bacon & Tomatoes!

I know probably this Summer we will have lots of nights with fun pasta salad dishes! They are so nice to whip up, and they store so beautifully! Being pregnant sometimes I don’t want to cook up stuff, or should I say have the energy too! With pasta salads and such it is easy, and I can make in morning and be good to go later for supper time!

 

Bowtie Pasta Salad with Bacon & Tomatoes - Ingredients

Ingredients

1 16-ounce box bowtie pasta
1 16-ounce package of bacon
1 large tomato, diced (appx. one cup)
2 green onions, finely sliced
1 cup mayonnaise
1 tablespoon red wine vinegar
salt and pepper to taste

Instructions

1. Cook pasta according to package directions, rinse in cool water and drain well. Set aside.

2. Chop the bacon in small pieces and brown it in a large skillet. When the bacon is crisp, drain on paper towels and allow to cool.

Bowtie Pasta Salad with Bacon & Tomatoes - Process 14. In a large bowl, combine the pasta, bacon, tomatoes, mayonnaise, green onion and vinegar. Mix thoroughly to combine. Reserve a few of the green onions for garnish, if desired.

5. Taste and add salt and pepper to taste. At this point you can also add more mayonnaise and/or vinegar to your liking.

Notes:

As it sits in the refrigerator, it may absorb some of the dressing, so you may need to add more mayonnaise and/or vinegar before serving.

Spicy Tomato Basil Pasta Salad with Edam Cheese

There is something about pasta salads in the summer time, we just can’t seem to get enough of them. I am a HUGE fan of The Pioneer Woman, and I came across this really fun pasta salad recipe, and I decided to give it a go. Granted I changed up the cheese. This salad is a lot different than what I would normally whip up. My husband loves tomatoes, and I am really starting to like basil, so I thought give it a go!  It is a Spicy Tomato Basil Pasta Salad with Edam Cheese!

Arla Dofino Cheese

I was sent some Arla Dofino Cheese to try out, and one of them was the Edam cheese! I thought it would go perfectly in this salad. I have to say all of these cheeses were amazing, and super creamy! Arla Dofino has become one of my favorite brand of cheeses! The Havarti was my husbands favorite, and mine is the Edam! I had never tried this brand of cheese until now, and I have been missing out! I highly recommend trying this brand of cheese if you love your cheese like we do! I can’t live without good cheese! 

Pasta Salad

So let’s get to the recipe shall we? It is really easy to whip up, and doesn’t have a ton of ingredients!

Ingredients: 

12 Ounces of Pasta ( I used Bow Ties)
1/2 cup Mayonnaise 
1/4 cup milk (I used Lactaid)
2-3 tbs white vinegar
1 to 1 1/2 cups Adobo Sauce from Chipolte Peppers ( If you like it hot add a little more)
10 ounces of grape tomatoes halved
1 Edam Cheese Round diced
8-15 Fresh Basil Leaves sliced
Salt and Pepper to taste
 

Tomato Basil Pasta SaladHow To Make: 

1. First off you want to cook your pasta according to the package, and then rinse in cold water when done, drain and place in a bowl. 
2. While pasta is cooking, I cut up the cheese, tomatoes and basil and set aside. 
3. Once pasta is done, put in a bowl, add tomatoes, cheese and basil. 
4. Then add all other ingredients to create the sauce, stir until well mixed, and then add salt and pepper to taste. Now the Adobe Chipolte sauce is pretty spicy, so if you prefer it to be mild I suggest 1 tbs, or if you want a bit more of a kick feel free to add more.
5. Refrigerate for a few hours before serving so the flavors will soak in!  
 
Serve and Enjoy! 

The Edam cheese is so nice and creamy and has a bit of a sharp taste to it! It pairs really well with the tomato and basil, and the kick of sauce adds another wonderful dimension to the salad!
