Super Easy Peppermint Cream Cheese Mints

Cream Cheese Mints

I am such a fan of mints! Whether they are after dinner mints, melt-a-way mints, cream cheese mints, I am there!! So I came across a great recipe for Peppermint Cream Cheese Mints and I adapted it a bit, and thought I would share with you all! These are very easy to make, and  I think you will love them!!

Now take note that depending on where you live and such, you might have to use more or less Powder Sugar for the recipe!

Ingredients:

Yield:  140 U.S. quarter-size mints

6-ounce package cream cheese, softened
1 teaspoon pure peppermint or mint extract
4 -5 cups powdered sugar (Depending on where you live, you will need more or less.)
Food coloring (Optional)
How to Make: 
1. To get started, take a cookie sheet or other kind of pan and line it with parchment paper. and lightly dust it with powdered sugar.
2. In a bowl put your cream cheese in and mix it until it is nice and creamy. I used my KitchenAid but you can use whatever. Once it is nice and creamy add in your peppermint extract and food coloring if you want to color it.
3. Once that is well mixed, you will add in your powdered sugar 1/2 cup at a time. Allow it to mix well, and then add the next 1/2 cup. You want the consistency to be a little sticky but not too much. That is why you might have to add in a little extra powdered sugar. I used around 4 1/2 cups in mine.
4. Then when it is a good very light sticky feel, you will roll it into tiny balls and lay out on the parchment paper. I did 3 rows of balls and then went with a fork and lightly pushed down on it, and made the marks. It gives it a little character! When I did that the top of the balls were already getting a little dry feeling. That is a good thing.
5. Once you made all your balls leave them out on the pan for the night. This will allow them to get harder so they are not so mushy. Once they are pretty dried you can put them in an air tight container!
