I like having enchiladas from time to time, but I don’t like how it can take so much time and effort to get them rolled up perfectly and ready to serve. So I thought why not make an enchilada casserole!
This easy enchilada casserole recipe ditches the tedious work of rolling up your enchiladas. Instead, you only have to add your ingredients in layers in a casserole dish and bake. It’s the same great taste with waaaaaay less work!
Now that I have this recipe, I rarely make regular enchiladas anymore because these taste just as good and save me a whole lot of time and effort!
You can use flour tortillas from the store, or make the dish extra delicious with homemade by using this easy tortilla recipe!
Ingredients Needed
- Ground Beef
- Onion, diced
- Canned Green Chilis
- Enchilada Sauce
- Flour Tortillas
- Sharp Cheddar Cheese
- Sour Cream (optional for topping)
- Black Olives (optional for topping)
How to Make Enchilada Casserole
Start by preheating oven to 350 degrees.
While oven is preheating, brown the hamburger along with the diced onion and green chilis. This will help bring out the flavors!
Once your meat is done cooking, drain the fat (if necessary.) Now comes putting the casserole together!
Make sure to spray your 9×13 pan with cooking oil to keep from sticking. Then pour some of the enchilada sauce on the bottom of pan. Then lay 2 tortillas on top of it, then add a bit more sauce. Then add your meat mixture, then shredded cheese. Repeat this process until you have added a few layers and make sure the last layer is cheese!
Once you are done putting casserole together, bake for around 20-25 minutes. The cheese will be melted and a little brown.
Then top with sour cream, black olives, salsa or whatever else you want and serve.
So as you can see pretty easy to make, and doesn’t take a lot of prep work. You can also choose to top with lettuce, diced tomatoes, more chopped onion, jalapenos, or whatever you and your family enjoy!!

- 1 lb. hamburger
- 1/2 medium sized onion diced
- 1 small can of diced green chilis
- 1 can enchilada sauce
- 4-6 flour tortillas
- 3 cups sharp cheddar cheese
Toppings
- Sour Cream
- Black olives
- Green Onions
Instructions
- Preheat oven to 350 degrees.
- While oven is preheating, brown the hamburger along with the diced onion and green chilis.
- Once meat cooked through, drain the fat (if necessary.)
- Spray 9×13 pan with cooking oil to keep from sticking.
- Pour some of the enchilada sauce on the bottom of pan.
- Then lay 2 tortillas on top of it, then add a bit more sauce.
- Then add your meat mixture, then shredded cheese.
- Repeat this process until you have added a few layers and make sure the last layer is cheese!
- Bake 20-25 minutes or until cheese is melted and just beginning to brown.
- Top with sour cream, black olives, green onions salsa or whatever else you want and serve.

This can also be done with burritos and tacos. My enchilada recipe also includes a couple layers of nacho cheese Doritos (crushed). The dish is always empty before the end of the party. Absolutely delicious!!
