Here is a tasty new recipe for muffins! They have a good cinnamon taste with a hint of vanilla, that will leave your mouth and tummy wanting more!!
This recipe will make 12 regular sized muffins!
Cinnamon Muffin Recipe
2 2/3 cups Spelt flour (but you can use all-purpose in it’s place)
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup packed, light brown sugar
1 teaspoon vanilla
1 cup milk
Preheat oven to 425 degree’s. In one bowl mix all dry ingredients and then set aside. In another bowl mix the butter, oil, both sugars together until they are creamy. Then add in eggs and vanilla. Once well mixed you can add in 1 cup of the flour mixture, then add a bit of the 1 cup of milk. Keep doing this till all the flour and milk have been added and well mixed.
Spoon the batter into cupcake liners and bake 15-18 minutes. Or until they are golden brown and when you put a toothpick in the center they come out clean! Then enjoy these delicious little muffins!!
