This Baked Sweet N’ Sour Chicken is out of this world :-D, like for real! I came across this recipe over at Six Sisters’ and I felt the sky’s open up, and angels singing when I took that first bite ;-). Heaven I tell ya, Heaven!! With the chicken being baked, it makes it so moist and tender it is crazy!
Chicken:
3-4 boneless chicken breasts
salt & pepper, to taste
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil
Sweet and Sour Sauce:
3/4 cup sugar
4 tbs ketchup
1/2 cup vinegar
1 tbs soy sauce
1 tsp garlic salt
Preheat the over to 325 degrees. Dice up your chicken into cubes and then season with salt and pepper. Heat your oil in a pan, and have it ready for when the chicken goes on. Dip your diced chicken into the cornstarch and coat the chicken. Then take the dipped chicken and put in the eggs, then take and put chicken in pan. Do this for all the chicken. Cook the chicken until it is a little brown. But Do not Cook All the way through. It will finish cooking in the oven.
In the meantime, mix all your sweet and sour ingredients together. Once the chicken is done put in a 9×13 pan, and take the sweet and sour sauce and pour over chicken. Bake in the over for around 1 hour. You need to stir the chicken every 15 minutes (this is a must).
