Cheesy Bacon Potato Soup

Last year I decided to try out a mix of ingredients to make a yummy cheesy bacon potato soup. I have perfected it of course over the time, and I feel I found a great recipe and I want to share with you all. I hope if you try this out, that you will love it like we do. It is a very creamy and delicious mix. I have made it for gatherings, and for us, and always hear how great it is :-).

Ingredients: 

1 package bacon ( I use Farmland Double Smoked Bacon)
4 tablespoons of bacon grease (it adds flavor, you can leave it out if you want)
4 cups of milk
1 box of chicken stock (32 oz.)
6-8 peeled and diced potatoes
1/2 corn starch
1/2 cup cold water
6 oz sharp velveeta cheese
2 tablespoons parsley
1 tablespoon season salt
1 tablespoon minced dried onions
How to make: 
Cook up your bacon until it is crispy. Then you need to break it apart into bite size pieces. Hold back around 4 tablespoons of the grease.
In a pan put in your chicken stalk, milk, parsley, season salt, and minced onions. Bring it to a boil, and toss in your bacon, and grease. Once it is boiling good take your cold water and corn starch in a cup and stir it till mixed. It has to be cold water to work. Then pour your water/corn starch water in the boiling mix and this will help thicken the sauce.
Reduce heat to low. Then toss in your diced potatoes and your diced velveeta cheese.
Stir often as it will stick to bottom. Let cook until your potatoes are done! Then serve, add more cheese and parsley to garnish for looks if you want.
