Before we know it, July 4th with be here! I am getting really excited for the 4th, I love to watch Fireworks. Our town puts on a pretty good show. We live in a smaller town so it isn’t anything like you would see in a big city, but it is pretty darn good to me!

I thought it would be fun to share a 4th of July Inspired recipe to get ready for the holiday. This Red White Blue Patriotic Trifle is so cute and really tasty. The recipe below is for homemade cake but if you don’t feel like making it from scratch, you can buy a boxed white cake and mix it accordingly, and then just separate the colors  once batter is well mixed.

This is a really easy dessert that doesn’t take much time, and is super cute. I hope you enjoy!

Patriotic Mini Trifle

This recipe makes about 8 Mini Trifle , but you are welcome to do one big one! This recipe will work for individual trifles or one big one!  To make the mini trifles, I love these mini trifle footed bowls. They are just the right size! Now let’s get on with how to create this delicious masterpiece!

Patriotic Mini Trifle Ingredients ­

1 C. sugar
1⁄2 C. butter, softened
3 egg whites
1 1⁄2 C. flour
2 tsp. Baking powder
1⁄2 C. milk
2 tsp. Vanilla
1 can of whipped cream (I used Reddi­Wip)
blue food coloring
red food coloring
maraschino cherries for topping (optional)

Directions ­

Preheat the oven to 350 degrees.
1. Combine the sugar, butter, vanilla, milk and eggs and mix well. Stir in flour and baking
powder. Mix well.
2. Separate the batter into thirds, leaving one bowl white. In the second bowl add 3 to ­4 drops of red
food coloring. In the third bowl add 3­ to 4 drops of blue food coloring. **You may want to add a few
more drops depending on how ‘bright’ you want your batter to be.
3. Pour each batter separately into (3) greased and floured 9×9 or 8×8 baking pans and bake 15 to ­20
minutes. Test the cakes with a toothpick and if it comes out clean they are cooked through.
4. Remove the cakes from the oven and let cool. Remove from the pans and lay on wax paper.
5. Using a knife or a fork cut the cakes into small chunks.
Assemble Trifles
Now once cake is cooked and cooled, it is time to start layering the trifles ­
– Layer 1: Red cake chunks
– Layer 2: Whipped cream
– Layer 3: White cake chunks
– Layer 4: Whipped cream
– Layer 5: Blue cake chunks
– Top Layer: Whipped cream with a cherry on top (optional)

I suggest serving immediately. I do not recommend saving (the whipped cream melts quickly). If you have any cake leftover you can save that in an airtight container up to 1 week.

Here is a great recipe for all of you who enjoy chocolate and peanut butter paired! These Double Chocolate Peanut Butter Giant Cookies, are one that could become a new favorite in your household! And if you don’t want it to be giant, you can always make them into regular size cookies as well, I just think having a giant cookie makes it fun!

It is a nice chilly day here today, it is truly starting to feel like winter. I got my crockpot potato soup cooking for dinner tonight, which will taste so good! I think I will hide inside for the day, I made sure to get my errands ran yesterday, because I heard the artic front was moving in. I hope you all are staying nice and cozy as well, if you are in the line of the cold front!

Now enough chitter-chat let’s get to the recipe, shall we?!


1 stick butter
1 can (14 oz) sweetened condensed milk
2 large eggs
½ cup sugar
1 tsp vanilla
1 ½ cups flour
¾ cups unsweetened cocoa
1 tsp baking soda
½ tsp salt
1 cup semi-sweet chocolate chips
1 package peanut butter chips

  1. Preheat oven to 350. Line two 9” pie pans with parchment paper or spray with non-

  3. In a microwave safe bowl, melt the butter.  Remove from heat and stir in sweetened
  4. condensed milk. Stir in sugar, vanilla, and eggs.
  5. In a separate bowl, mix together the flour, cocoa, baking soda, and salt.  Stir into the
  6. butter mixture.  This dough will be thin, do not add more flour.
  7. Gently fold in chocolate and peanut butter chips.
  8. Pour into prepared pie pans.  Bake 18-22 minutes.

My mother-in-law and I ran to town a few weeks back and I picked up some of the TWIX Bites, and I grabbed a bag of the Milky Way Simply Caramel Bites too! I thought it  would be fun to do a TWIX Bites Stuffed Brownies, with Marshmallow TWIX Topping! These are such an ooey-gooey treat that would be perfect for Father’s Day, or any upcoming family gathering! They are a bit messy, I will be the first to say, but they are so delicious, you will want to get your hands dirty for this! I love that these are bite-size, they make perfect for snacking on and baking!!

These brownies are very easy to make. I know not everyone enjoys baking and I wanted a quick and easy recipe that doesn’t take much effort!  I used a boxed brownie mix to make it an easy treat to whip up! These are really quick to whip up, and give brownies a whole new light!


Boxed Brownie Mix (any one will do)
1 Bag of Mini Marshmallows
1 Bag of TWIX Bites

1. First off you will make your brownies as the box says. Once you have the batter mixed well, you will pour half of it into a 9×13 greased pan. Preheat the oven to what it says to on the back of the brownie box.

Next you will want to add a few of the bites over the top of the brownie mixture! I spaced mine out, but you are welcome to add as many as you would like!

I baked mine for 20 minutes, and then pulled them out to put the marshmallows on. They are undercooked at this point, but they will go back into the oven, rest assured!

I pulled my brownies out at 20 minutes. I wanted to add the marshmallow on top, and toss back in the oven to finish baking and toast  the marshmallows. That way you will have nice soft brownies and perfect marshmallows on top! I finished baking these for around 5-8 minutes longer. I let the marshmallows get toasty on top!

While they were finishing baking I chopped up some more TWIX Bites to sprinkle on top of the brownie mix, to give it some more personality!! It was hard resisting eating all these bites, they are SO good!!!!

While the brownies are still warm sprinkle some chopped up TWIX Bites over the top of the brownies. You can add as many as you want, I added quite a few! Then serve warm, or allow to cool and then cover them with a lid and serve when you want! The marshmallow topping will get a little crunchy in spots, since you toasted the marshmallows. It is like eating a marshmallow after toasting it on a fire almost!

I had my sister and my niece taste test these brownies to see if they were a good treat! It was a winner in their books! They love chocolate just like me, so I thought they would really enjoy these! It was nice getting to spend the morning with them and chit chat, and enjoy a sweet treat!

Thin Mint Inspired Cookies – Just 4 Ingredients and No Baking!

I have a BIG devotion to Girl Scout Thin Mint cookies. It can be REALLY hard waiting for cookie season to roll around, so I’m glad to have this homemade Thin Mint Cookies recipe to tide me over. I love the time of year where you hear a little tap on the door and it is a cute little Girl Scout asking if you want to buy some cookies! Of course it is hard for me to say no, as one I love all their cookies, but two it is a great way for kids to get active in the community and who doesn’t want to support them?!

I used to be a Girl Scout when I was younger and I thought it was a lot of fun. We would do fun things like have a picnic party, or go pick up trash along the highway once a year. It was a great way for me to learn to give back and help out our community! When you are surrounded by all the other girl scouts it makes it a lot of fun, regardless of what you are doing.  My niece is now a girl scout and it is fun to see all the fun things they do. They recently went and stayed the night in a mall over night, and had fun crafts and things to do! My sister was telling me how fun it was!!

With all the Girl Scout talking, it made me really hungry for some Thin Mints! So I thought it would be fun to do a Thin Mint Inspired Cookie for you all!! I have seen the ones that you actually bake cookies and then dip into the chocolate. I thought I would do one that was a bit easier and no baking involved!  Now these don’t taste exactly like Thin Mints, but they are close enough!

No Bake Thin Mint Cookies



  • 2 cups of Semi-Sweet Chocolate Chips
  • 2 tbs shortening
  • 1 1/2 tsp peppermint extract
  • 1 Roll of Ritz Crackers


  1. First off you want to take your chocolate chips and shortening and pop in the microwave and head for about 15 seconds, and then stir the chips and repeat till all the chocolate is melted. Once it is melted you will then drop in your peppermint extract and stir well.
  2. Then just dip each cracker one by one into the chocolate mix, and shake off the excess chocolate. I use a fork to scoop up the cookie, that way it can shake off easily.
  3. Place on Wax paper and allow to harden. I then popped ours in a ziploc bag and placed in the freezer to eat once cold. We like ours straight out from the freezer, I think they taste the best that way!

Soft M&M Pudding Cookies

I don’t think you can go wrong with M&M’s, they are just so good!!! I haven’t made M&M cookies in ages so I thought I better get on it and get some whipped up. I actually prefer softer cookies over ones that have a crunch to them, so I always bake my for less time to help keep them soft!

Pudding Cookies are something I forget about! Not sure why, but I thought it would be a fun twist. You use pudding in the cookie mix :-), pretty neat right?! It adds a little bit of a softer texture and as for taste it has a slight difference. I really love these and they are pretty quick to whip up!!


  • 1 cup of buttered (softened)
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp baking soda
  • Box of Vanilla Pudding (I used the smaller size box)
  • 2 1/4 cup flour
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups M&M’s
  • 1 cup mini semi sweet chocolate chips (you can use milk chocolate)


  1. First off preheat the oven to 350 degrees.
  2. In my KitchenAid I mixed in the softened butter and both sugars till creamy. Then add the eggs one by one, and then start adding in the pudding mix, flour, baking soda, and vanilla. Once it is well mixed it will have a creamy texture. Then add in your M&M’s and the chocolate chips.
  3. Spoon out onto a cookie sheet and bake for around 8-10 minutes. You want them to be a light golden color, and they will be a bit soft.
  4. Put cookies on a baking rack or wax paper, whatever you have on hand. Store in air tight container or freeze if you want.

M&M Pudding Cookies

You could also get themed M&M’s for whichever holiday to give the cookies a theme. I looked for some Thanksgiving/Halloween colored ones but didn’t find any at our store. They could have been sold out! Plus if you want to opt out of the chocolate chips in the recipe you can, you might just want to add a few more M&M’s into them.

Hope you guys enjoy this recipe, I know Adam and I will enjoy eating them up!! I think I will end up freezing some of them so we can have them later, although I know I could probably eat them all at once ;-)!
