Easy Cheesecake Stuffed Strawberries

I hope you all had a wonderful Easter weekend! We ended up having a lunch Sunday afternoon with my husbands side of the family! I was in charge of whipping up some desserts and one of them I decided would be these Easy Cheesecake Stuffed Strawberries! They are so good, and really easy to make. They are a nice whipped texture on the inside that has a nice cheesecake flavor. I mean it isn’t identical to cheesecake but it is compare-able for sure!

Cheesecake Stuffed Strawberries They were surprisingly pretty easy to whip up! I was struggling on getting them to stay open, and then realized I have to pull each cut out a little and then put the filling in! It was a trial an error but once I got the hang of it, I was good to go!

Here is a picture, as you can see the strawberry is cut most of the way down. Then I pulled each of the four slits apart a little. Then you put the cream cheese filling in, and you can push the strawberry back together if you want to change the shape some! I ended up making a double batch for our gathering! 

Cheesecake Stuffed Strawberries


1 package of strawberries (mine was 1 lb)
8 oz of Cream Cheese (softened)
1/2 cup of Powdered Sugar
1 tsp Vanilla 

Optional: Chocolate to drizzle on top of them, and/or graham cracker crumbs to sprinkle on.

How to Make: 

First off I just tossed in the cream cheese in my KitchenAid Mixer, and turned it on low and whipped it good. The cream cheese has to be softened, I just let mine sit out on counter for awhile.  Once it was nice and creamy I slowly added the powdered sugar and vanilla. Once well mixed, pour the cream cheese mixture into a piping bag!

Then cut your strawberry into a cross shape, and go almost all the way down to the stem. Then gently pull each of the sections back a bit on the strawberry. Then stick your piping bag in and squirt some of the cream cheese mixture in. Then if you want to sprinkle chocolate over them or add some graham cracker you can. I opted not to, but next time I make them I think I will try it out!

I put them in a pan and put a lid on them, and stored them in the fridge. It is best if you make like 2-5 hours before your going to serve them, as the strawberries will start to break down. I made mine first thing in the morning and we ate lunch and then had them. They held up good!

    • Oh I am so sorry! I didn’t realize Strawberries can make kidney stones or worse. I had a kidney stone once… BRUTAL! I feel for ya!!
