Spicy Tomato Basil Pasta Salad with Edam Cheese

There is something about pasta salads in the summer time, we just can’t seem to get enough of them. I am a HUGE fan of The Pioneer Woman, and I came across this really fun pasta salad recipe, and I decided to give it a go. Granted I changed up the cheese. This salad is a lot different than what I would normally whip up. My husband loves tomatoes, and I am really starting to like basil, so I thought give it a go!  It is a Spicy Tomato Basil Pasta Salad with Edam Cheese!

Arla Dofino Cheese

I was sent some Arla Dofino Cheese to try out, and one of them was the Edam cheese! I thought it would go perfectly in this salad. I have to say all of these cheeses were amazing, and super creamy! Arla Dofino has become one of my favorite brand of cheeses! The Havarti was my husbands favorite, and mine is the Edam! I had never tried this brand of cheese until now, and I have been missing out! I highly recommend trying this brand of cheese if you love your cheese like we do! I can’t live without good cheese! 

Pasta Salad

So let’s get to the recipe shall we? It is really easy to whip up, and doesn’t have a ton of ingredients!

Ingredients: 

12 Ounces of Pasta ( I used Bow Ties)
1/2 cup Mayonnaise 
1/4 cup milk (I used Lactaid)
2-3 tbs white vinegar
1 to 1 1/2 cups Adobo Sauce from Chipolte Peppers ( If you like it hot add a little more)
10 ounces of grape tomatoes halved
1 Edam Cheese Round diced
8-15 Fresh Basil Leaves sliced
Salt and Pepper to taste
 

Tomato Basil Pasta SaladHow To Make: 

1. First off you want to cook your pasta according to the package, and then rinse in cold water when done, drain and place in a bowl. 
2. While pasta is cooking, I cut up the cheese, tomatoes and basil and set aside. 
3. Once pasta is done, put in a bowl, add tomatoes, cheese and basil. 
4. Then add all other ingredients to create the sauce, stir until well mixed, and then add salt and pepper to taste. Now the Adobe Chipolte sauce is pretty spicy, so if you prefer it to be mild I suggest 1 tbs, or if you want a bit more of a kick feel free to add more.
5. Refrigerate for a few hours before serving so the flavors will soak in!  
 
Serve and Enjoy! 

The Edam cheese is so nice and creamy and has a bit of a sharp taste to it! It pairs really well with the tomato and basil, and the kick of sauce adds another wonderful dimension to the salad!
