My Saturday – Making Cinnamon Sugar Banana Muffins with My Niece!

Kaylyn helping make muffins Last Saturday one of my nieces, Kaylyn, came over to help me bake up some muffins for them and some for us to keep! We decided to make cinnamon sugar banana muffins, and some apple cinnamon muffins! Both of them turned out so good, and I have to say she was an exceptional helper!!! She read the recipe to me, and Kaylyn put all the cinnamon and sugar onto the muffins before baking, and helped me take pictures of the muffins!!!! She made sure to bring her apron she made, so that she wouldn’t get her clothes dirty! She is such a great crafter, and I knew she would be a wonderful cook too!! 

Cinnamon Sugar Banana Muffins The Cinnamon Sugar Banana Muffins turned out so good. I love the topping on them, it really gives a whole new dimension of flavor to these muffins! They were pretty quick to whip up, and the baking time wasn’t too long either! Now I use my KitchenAid mixer, but if you don’t have one you can mix by hand, or use any other mixer. 

Ingredients: 

1 1/2 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas mashed (2 over-ripe, and one ripe)
1/3 cup canola oil
1/2 cup white sugar
1 egg
2 tbs cinnamon 

Topping Ingredients: 

2 tbs 
1 tbs sugar
3 tbs brown sugar
 

How to Make: 

First off preheat oven to 375 degrees. Then combine your flour, baking soda, baking powder and salt in a small bowl and set aside. In your mixer (I used KitchenAid) combine the mashed bananas, oil, sugar, egg and cinnamon. Once it is well mixed add in your flour mixture along with the cinnamon. 
Spoon mixture into cupcake tins. Then mix the topping ingredients together and sprinkle over the top of each muffin! 
Bake for 15-20 minutes or until done. Depending on where you live, the cooking time will vary.

Cinnamon Sugar Banana Muffins These are so good, and pretty addictive. You can add nuts or leave them without any!! Either way they are super good, and the topping just throws these muffins over the top! My sister, Felicia, really loved them. She texted me and told me that they were the best banana muffins she has had, so that made me feel pretty happy!! 

I ended up tossing some of the muffins in the freezer to keep them fresh!
