Pumpkin Oatmeal Chocolate Chip Cookies

Oh how I love anything pumpkin, it is one of my favorite things! I actually made these pumpkin cream cheese swirl muffins that are beyond heaven. Clay just gobbled them up so fast! I wanted to do more pumpkin so I made these oatmeal pumpkin chocolate chip cookies.

What I love about these cookies is the oatmeal paired with the pumpkin, it really is delicious! The oats really add a nice texture to the cookies. The chocolate chips are a good flavor addition, I debated putting them in and I am so glad that I did!

I used my cookie scoop so they are a little bit smaller in size, but you can always use a bigger scoop. They don’t really spread much on the pan, which is nice. They are a nice thicker cookie which is what I prefer. I cook them a little less on time so they stay soft, but if you prefer a more crunchy cookie you can always bake a bit longer.

Oatmeal Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 cup pumpkin puree
  • 1 cup all purpose flour
  • 2 cups quick oats
  • 1 1/2 cup brown sugar
  • 3/4 cup butter (softened)
  • 1 tablespoon vanilla extract
  • 2 eggs (room temperature)
  • 1/2 teaspoon baking powder
  • 1 tablespoon pumpkin pie seasoning
  • 1 teaspoon salt
  • 1 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. I use a KitchenAid Mixer but if you don't have it you can use a bowl. You will want to cream your butter and brown sugar together. Then add in your pumpkin puree,vanilla, and eggs. Mix well.
  3. In a separate bowl mix your flour, baking powder, pumpkin pie seasoning, and salt.
  4. Slowly add in the dry ingredients to the wet.
  5. Once well mixed scoop out onto a cookie sheet and bake 10-12 minutes. They will get a little golden on top. You can stick a toothpick through them if they come out clean done. Put on baking rack to cool.

I thought these were pretty quick to whip up and bake. I made around 3 dozen cookies, mine were smaller in size. Depending on how big you make them will depend on how many it makes!

As you can see these beauties are nice and soft on the inside and so fluffy! I truly love them! My mother-in-law was over and she got to try them and really loved them too! Clay thought they were delicious so I say they are a true winner in our household! They are best straight out of the oven after they have cooled a few minutes! Cookies never last to long in our house!

Saffron Shrimp With Gnocchi – A Fun New Dinner To Try!

If you are looking to step out of your daily menu, try this Saffron Shrimp with Gnocchi! I had never had Gnocchi before, so it was something new for us. If you are like me and maybe not extremely adventurous with food, gnocchi is a soft dumpling. They do have different styles of it, from potato, bread crumbs, cornmeal and so on. The ones we had were potato based, and we all really liked them! 

Since Clay is under 1, he wasn’t able to eat the shrimp, as little babies can’t have shellfish. So we created a little meal for him that he was able to eat! So don’t worry, we didn’t give him any of the shrimp!

This is a really pretty dish, the saffron give the gnocchi and shrimp that really pretty orange color, and to top it with the basil really makes it pop! I thought it was a really fun dish to whip up, and the presentation was amazing!

Saffron Shrimp With Gnocchi – A Fun New Dinner To Try!

Ingredients

  • 1 lb Raw Shrimp
  • 1 Package of Gnocchi (17.6 ounce)
  • 1 cup of cherry tomatoes cut in half
  • 1 shallot finely chopped
  • 2 cloves garlic chopped
  • 1/2 cup basil sliced
  • 1 tbs tomato paste
  • 1 tsp olive oil
  • 1/16 tsp saffron

Instructions

  1. First off in one pan you want to bring your water to a boil for the gnocchi. Cook gnocchi as directed on packet and set aside.
  2. In a skillet take the olive oil and get warm, then add in your shallot and garlic.
  3. Once you are able to smell the aroma add in your tomato paste, and add a little salt and pepper to taste. Cook this for 2-3 minutes, you want to be able to smell the tomato paste when you are cooking it.
  4. Next salt and pepper your shrimp, and then toss with the saffron and mix up till the shrimp is coated.
  5. Toss in the pan with the tomato, garlic, and shallot. Cook on medium high for 2-4 minutes, or until the shrimp is opaque and cooked through. Then add your cooked gnocchi that is drained, with the shrimp and cook for another 2-3 minutes.
  6. Add in your diced tomatoes and 3/4 of your chopped basil.
  7. Serve and top with the extra basil for looks.

You do have a few steps in this recipe, but it is really a fun twist. Now if you are not a fan of saffron you will not like this recipe, as it has a stronger saffron flavor. If you are not sure if you like it, just know it is a little bit of a different flavor.

I know we will make this in the future, it is a nice treat! I have never been a huge seafood lover but I do enjoy shrimp! One day I would love to try lobster, as I never have. I think I might enjoy it!

My birthday is the 12th of August so when I was little I would pray my birthday would get here. Then at the same time dread it as I knew school would start shortly after! Haha, I wasn’t the biggest fan of school as I was afraid of all the germs, so there was tears, more tears and then a few more!

Baked Bean Casserole with Beef and Bacon! Crowd Pleaser!

Delicious Casserole with Beans, Ground Beef, and Bacon!

I am trying to venture out and create new recipes for us to enjoy, and I tried this baked bean casserole recipe earlier this week! I get tired of eating the same thing, it just isn’t something I enjoy! I am trying to add new flavors to our menu and of course use more veggies in our cooking!

This baked bean casserole is heavenly, it has ground beef, bacon and beans, it is very hearty and is great for a side dish or the main course! It is very filling and the fiber from the beans is really nice! Adam loves beans so I try to add them into the menu when I can!

Trisha Yearwood has a recipe very similar, that I kind of took and tweaked to fit our family needs and what we had in the pantry! I get a lot of recipe inspiration from her as she really creates delicious meals. I tend to watch a lot of cooking shows during the day to find inspiration!

So let’s get to the recipe shall we, so you can create this delicious creation and serve it to your loved ones! It is very quick to whip up, and takes a little time to bake but it is so worth it!

Baked Bean Casserole with Beef and Bacon! Crowd Pleaser!

Ingredients

  • 1 lb ground beef
  • 1 bell pepper
  • 1 small yellow onion
  • 1/2 cup ketchup
  • 1/2 cup bbq sauce
  • 1 tsp soy sauce
  • 1 tbs brown sugar
  • 2 cans of pork and beans
  • 1 package of bacon (we used peppered but you can use whatever you prefer)

Instructions

  1. Preheat your oven to 400 degrees. While it is warming up cook up your ground beef.
  2. Then prep your veggies into small diced pieces.
  3. Once your ground beef is close to done, toss in your veggies and finish cooking the beef.
  4. In a small bowl, mix your ketchup, bbq sauce, soy sauce and brown sugar together and set aside.
  5. Once the meat is all browned, toss in your sauce mixture and the beans.
  6. Stir well and pour into a cake pan.
  7. Cut your bacon into 4 pieces and spread it over the casserole. Just do one layer of the bacon all over the casserole.
  8. Bake for 35-40 minutes or until the bacon is cooked and crispy.

The chunks of bell pepper paired with that peppered bacon and the beans is really amazing! Adam rated this recipe a 8 out of 10, it has all the things he loves! You could use this recipe as a side dish for a pot luck, as the main course (like we did) it is very versatile!

I know we will be using this recipe in our menu rotation for sure in the future!

BBQ Pulled Beef – 2 Ingredients!

Here is a new recipe you might be interested to try out, it is BBQ Pulled Beef, that is easy to make! Anymore when it comes to cooking, I need something that is simple and not a lot of prep work! Clay is going through a growth leap where he wants constant attention, and he has to be right next to me. So to make a meal, the top requirement is easy to prep, and doesn’t take to much work to cook! I would rather make quick meals, than not give Clay the attention he needs, I don’t like it when he cries!

Obsessed with the Guy Fieri BBQ Sauce!

Okay before I begin, I want to talk about the Guy Fieri BBQ Sauce Kansas City flavor…. this stuff is beyond delicious! I tried the Carolina one, and I didn’t care for it to much, but the Kansas City one is to die for! This is in no way sponsored, it is just a true love at first taste relationship! You can buy this online, or at most mass retail stores, I really recommend giving it a try!


We love the watching Diners Dives and Drives, with him hosting it, so when I saw this in the store I knew we needed to give it a try! This sauce really is a perfect flavor combo for this recipe, so I really wanted to share it with you guys!

The one secret to this recipe is to sear the meat a little before you put in the oven. It adds a little bit of a different flavor to the roast, and also a different texture to meat, which makes it really tasty!!! After I sear both sides, I just pour around 1/2 the bottle of bbq sauce on top, and then toss in the oven to bake for the day!

BBQ Pulled Beef – 2 Ingredients!

  1. First off preheat your oven to 225 degrees.
  2. While it is preheating, in a skillet or in a dutch oven, you will want to put a little cooking oil in the pan Medium-Medium Low heat; and let it heat up a little.
  3. Take your beef roast and generously salt and pepper both sides of the roast (like 3 minutes each site), then once the oil in the pan is hot, place in pan and let it sear both sides of the roast.
  4. You just want it to brown it a little, it is not meant to cook the roast at all, you just want to have it a little brown.
  5. In a dutch oven or casserole dish with a lid, you will want to spray with cooking oil. Then add a thin layer of bbq sauce on the bottom of dish.
  6. Once roast has browned a little, lay the roast on top of the bbq sauce. Next take some more bbq sauce and pour over the top of the roast to coat it. I use around 1/2 the bottle.
  7. Cover the roast with the lid and bake in the oven for at least 7 hours.
  8. Once it has cooked, take it out, and pull the meat apart, it should fall apart easily. Stir it around in the sauce in the pan, and serve!

It is best to cook in a dutch oven or a casserole dish that has a lid. It holds in the moisture and won’t dry out your meat in the baking.

 


If you don’t know what a dutch oven is, you can use it on the stove top, and then it can go directly to the oven. Where as a casserole dish can’t be used on the stove top. I learned that a few years back, when I was watching a cooking show!

Once you pull the roast out of the oven, it will be very tender. Just grab a fork and it will just shred so easily. Then you use the bbq sauce in the bottom of the pan to soak the meat in to make it nice and flavored! 
BBQ Beef
You can eat this plain, serve on a bun, or whatever your heart desires. It is really easy prep work and taste really yummy. You can cook this in a crock pot, it will just change the flavor some, and we just prefer it in the oven, as it gives it a new flavor.
