Calling all you pumpkin lovers, I have a delicious recipe for you today! It is moist pumpkin chocolate chip muffins, they truly are heavenly! I am all about nice and moist muffins and this recipe doesn’t disappoint! The key here is watching your baking time, if you over-bake them they will not be moist! If you follow the recipe and keep a close eye on the time, you should have perfectly moist pumpkin chocolate chip muffins in no time!

These Pumpkin Muffins Freeze Beautifully

I am a huge fan of pumpkin, and it turns out Clay is as well. He will eat a whole muffin by himself, he just loves them! These work great to freeze, and then take them out when you want one or two and just let thaw. You can toss them in the microwave as well for a few seconds to warm up, I prefer to let them thaw by themselves and eat when still a little cold!

I was also going to say if you haven’t tried using silicone muffin pans, they are really nice! These are BPA Free, dishwasher safe, and heat resistant up to 450 degrees! These make the cleanup so simple, no mess, or stuck on gunk, it just wipes right off!  As well as being great for baking cakes, these pans can also be used for your other culinary creations such as for cooking tartlets, mini cheescakes, small chicken pot pies, quiches and lasagnes and even as molds for making soap!  They are truly a great piece to have in your kitchen stock!

So, lets get to the recipe, this is very easy to mix up, and I always use my KitchenAid mixer, it just makes the prep easier for me, but if you don’t have one, a spatula or hand mixer works just as good!

Moist Pumpkin Chocolate Chip Muffins


  • 1 Can of Pumpkin (2 cups of puree)
  • 1 Cup Canola Oil
  • 2 Tsp Vanilla
  • 3 Large Eggs
  • 3 Cups all purpose flour (sifted)
  • 2 Tsp Cinnamon
  • 1 Tsp Salt
  • 2 Tsp Baking Soda
  • 2 Tsp Baking Powder
  • 1 Cup Mini Chocolate Chips (I used semi sweet but you can use what you want)


  1. First off you want to preheat your oven to 375 degrees.
  2. Then you want to mix your eggs, pumpkin, oil, sugar and vanilla together.
  3. In a separate bowl sift your flour, and then add your baking soda, baking powder, salt and cinnamon in to the mixture.
  4. Slowly add the flour mixture to the wet. Once it is close to fully mixed, add in your vanilla extract.
  5. When it is all mixed up, add in 3/4 of your chocolate chips, and hand stir them in.
  6. Pour into your muffin tins and top the muffins with remaining chocolate chips.
  7. Bake for around 15-20 minutes. Depending on your oven will depend on cooking time. Stick a toothpick in them and if it comes out clean they are done.


These do freeze nicely, just place in a freezer pack and get as much air out of it as you can. Then just take them out as you want to eat them.


See, a pretty basic and simple pumpkin muffin recipe that is quick to whip up! You can use cupcake liners or go without, I prefer to use them but it is all about your preference!

Every now and again…. wait what am I saying here.. I always crave sweets! Often, I am wanting something that is chocolate or something decadent to satisfy my sweet tooth! I don’t want to make a whole cake so I have used this chocolate peanut butter mug cake recipe and it is so quick and delicious! I add peanut butter in mine, but you can leave that out or switch it with some hazelnut spread as well!

What I love about this is you mix all the ingredients up in a bowl, pour into a mug and pop it in the microwave for a minute and tada a delicious cake to the rescue! I have an almost one year old little boy and he is my everything, but some days he does try my patience and on those days it is nice to have a quick dessert to help calm the nerves! If you know what I mean!!

I grabbed a little Pryex bowl to whip up my cake batter. I love my Pyrex set because it is so nice to have on hand. Each bowl comes with a lid, so that you can store leftovers in, side dishes, and more. My mom bought me this set years ago and they still are like brand new, I truly use them non-stop! They do have all sizes of bowls and other products, if you are interested!

Chocolate Peanut Butter Mug Cake Recipe – To Die For!


  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons sugar
  • 1/4 cup milk
  • 2 tablespoons butter (softened)
  • 1/4 teaspoon pure vanilla extract
  • 1 tablespoon creamy peanut butter (OPTIONAL)
  • 1 tablespoon mini chocolate chips (OPTIONAL)


  1. In a small bowl you will want to mix in the flour, cocoa powder, sugar, baking powder and mix till it is combined. Then add in your butter and milk and vanilla extract.
  2. Then you want to mix your peanut butter and chocolate chips together in a separate bowl.
  3. Take your coffee mug and pour the cake batter in, then put your dollop of peanut butter and chocolate chips in the center. Press it down so it is even in the cake batter.
  4. Cook on high in the microwave anywhere from 50-70 seconds. Mine takes right at 55 seconds to cook, but all microwaves cook at different heats.


This chocolate peanut butter mug cake is simple to whip up and delicious! Like I had said earlier you can do hazelnut spread if you prefer that, I don’t really like it so I always do peanut butter. Or if you don’t want a filling just make a mug cake! It is a pretty simple recipe!

Oatmeal Pumpkin Chocolate Chip Cookies – Are a Hit This Season

Oh how I love anything pumpkin, it is one of my favorite things! I actually made these pumpkin cream cheese swirl muffins that are beyond heaven. Clay just gobbled them up so fast! I wanted to do more pumpkin so I made these oatmeal pumpkin chocolate chip cookies.

What I love about these cookies is the oatmeal paired with the pumpkin, it really is delicious! The oats really add a nice texture to the cookies. The chocolate chips are a good flavor addition, I debated putting them in and I am so glad that I did!

I used my cookie scoop so they are a little bit smaller in size, but you can always use a bigger scoop. They don’t really spread much on the pan, which is nice. They are a nice thicker cookie which is what I prefer. I cook them a little less on time so they stay soft, but if you prefer a more crunchy cookie you can always bake a bit longer.

Oatmeal Pumpkin Chocolate Chip Cookies


  • 1 cup pumpkin puree
  • 1 cup all purpose flour
  • 2 cups quick oats
  • 1 1/2 cup brown sugar
  • 3/4 cup butter (softened)
  • 1 tablespoon vanilla extract
  • 2 eggs (room temperature)
  • 1/2 teaspoon baking powder
  • 1 tablespoon pumpkin pie seasoning
  • 1 teaspoon salt
  • 1 1/2 cup chocolate chips


  1. Preheat oven to 350 degrees.
  2. I use a KitchenAid Mixer but if you don't have it you can use a bowl. You will want to cream your butter and brown sugar together. Then add in your pumpkin puree,vanilla, and eggs. Mix well.
  3. In a separate bowl mix your flour, baking powder, pumpkin pie seasoning, and salt.
  4. Slowly add in the dry ingredients to the wet.
  5. Once well mixed scoop out onto a cookie sheet and bake 10-12 minutes. They will get a little golden on top. You can stick a toothpick through them if they come out clean done. Put on baking rack to cool.

I thought these were pretty quick to whip up and bake. I made around 3 dozen cookies, mine were smaller in size. Depending on how big you make them will depend on how many it makes!

As you can see these beauties are nice and soft on the inside and so fluffy! I truly love them! My mother-in-law was over and she got to try them and really loved them too! Clay thought they were delicious so I say they are a true winner in our household! They are best straight out of the oven after they have cooled a few minutes! Cookies never last to long in our house!
