Oatmeal Pumpkin Chocolate Chip Cookies – Are a Hit This Season

Oh how I love anything pumpkin, it is one of my favorite things! I actually made these pumpkin cream cheese swirl muffins that are beyond heaven. Clay just gobbled them up so fast! I wanted to do more pumpkin so I made these oatmeal pumpkin chocolate chip cookies.

What I love about these cookies is the oatmeal paired with the pumpkin, it really is delicious! The oats really add a nice texture to the cookies. The chocolate chips are a good flavor addition, I debated putting them in and I am so glad that I did!

I used my cookie scoop so they are a little bit smaller in size, but you can always use a bigger scoop. They don’t really spread much on the pan, which is nice. They are a nice thicker cookie which is what I prefer. I cook them a little less on time so they stay soft, but if you prefer a more crunchy cookie you can always bake a bit longer.

I thought these were pretty quick to whip up and bake. I made around 3 dozen cookies, mine were smaller in size. Depending on how big you make them will depend on how many it makes!

Pumpkin-Oat Chocolate Chip Cookies

As you can see these beauties are nice and soft on the inside and so fluffy! I truly love them! My mother-in-law was over and she got to try them and really loved them too! Clay thought they were delicious so I say they are a true winner in our household! They are best straight out of the oven after they have cooled a few minutes! Cookies never last too long in our house!

Oatmeal Pumpkin Chocolate Chip Cookies Recipe

Ingredients:

1 cup pumpkin puree
1 cup all purpose flour
2 cups quick oats
1 1/2 cup brown sugar
3/4 cup butter (softened)
1 tablespoon vanilla extract
2 eggs (room temperature)
1/2 teaspoon baking powder
1 tablespoon pumpkin pie seasoning
1 teaspoon salt
1 1/2 cup chocolate chips

Directions:

Preheat oven to 350 degrees.
I use a KitchenAid Mixer, but if you don’t have it you can use a bowl. You will want to cream your butter and brown sugar together. Then add in your pumpkin puree,vanilla, and eggs. Mix well.
In a separate bowl mix your flour, baking powder, pumpkin pie seasoning, and salt.
Slowly add in the dry ingredients to the wet.
Once well mixed scoop out onto a cookie sheet and bake 10-12 minutes. They will get a little golden on top. You can stick a toothpick through them if they come out clean done. Put on a baking rack to cool.

Here are some interesting surprising health benefits of sleep, that you may not have heard of. When you have a newborn it makes you truly realize how important sleep is, and how much you miss it! I have a now five month old little boy who still wakes me up a few times through the night to eat! Sometimes if I am lucky he eats just once, but wakes up a few times to where I have to soothe him back to sleep!

Going on five months of little sleep is exhausting! I never knew how much I valued sleep until now. It is so different than just not sleeping through the night!! Having a new baby truly wears on you so much! I thought it could be fun to share some health benefits of sleep, and why it is so important to try and get adequate sleep if you can!

Getting Enough Sleep At Night

Plus since we are talking about sleep, make sure that you have a nice bed to sleep on! Being able to sleep nice and sound is key to healthy and good sleep. Overall Better Health: This is one most of us know, that it can help your body be healthier all around. Plus studies have been found that lack of sleep can lead to health problems like heart disease, obesity and more.

Physical Health: This is a neat one, sleep plays a big role in physical health! Getting enough sleep helps heal and repair your heart and blood vessels! We all need a healthy heart so make sure to catch those zzz’s when you can!

Memory: This is one I truly have dealt with. Being well rested is good for your memory and mind! It helps keep you on point and ready for trivial things you may deal with on a daily basis. I found that when I got little sleep I was slower to think about things, and sometimes was slower to function with daily tasks. It was like my brain wasn’t working right!

Learning: If we don’t get enough sleep when it comes to learning new tasks, it is harder for us to retain the information! Studies have shown being well rested helps us learn easier to retain the information.

Mood Booster: We all could use a little more perk in our steps I am sure at times! Sleep can make you feel better overall, by boosting your mood and of course ridding those under-eye circles we all dread!

 

Getting adequate sleep is so beneficial for our heart, weight, mind and so much more! Tonight try and go to bed a little earlier, or sleep a little later if you can, because it truly does matter getting rest! Depending on your age will depend on how much sleep you require. I do often say listen to your body as well.

Salt Wasting Congenital Adrenal Hyperplasia (CAH) Diagnoses For Clay

As you all know I just finally got on to share my announcement that Clay had finally arrived on 10/20/15!  Since then we have had a long road of ups and downs, and I wanted to share it with you guys!

While we were in the hospital they did their State Blood Work test. We didn’t think anything of it, and ended up getting discharged and sent home. Well life went pretty good at first and then around day 6, he started acting pretty sick. He seemed a bit lethargic, throwing up, having diarrhea and just didn’t seem to be himself. So, late one night I woke Adam up and we headed in to the emergency room to get him checked out.

While in the ER they drew blood as he had pretty good jaundice and they were worried that the level might be to high. So, they checked him over and said follow up with pediatrician the next day. So we did, and the doctor wanted to do a full blood work check to see what might be going on.

Later that day we got home, and got a call that said we needed to get Clay to the hospital right away, that Wichita was sending an airplane to get him and take him to Wesley in the NICU. His state blood work showed that he had Salt Wasting Congenital Adrenal Hyperplasia (CAH). it is a genetic disorder. What it is, his adrenal glands are larger than what they should be. He doesn’t produce the right amount of sodium or potassium and such for his body, which can throw everything off. If left untreated it can lead to a coma, cardiac arrest and even death. It is a very serious illness, and only happens to 1 in 15,000 babies. For Clay to have gotten this, Adam and I both have to be carriers of this or have the condition ourselves. We are in the process of getting tested now so we can learn more about where it came from and so on.

That is the scariest day of my whole life, watching them poke around to get an IV started, they ended up having to do it in his head. Not knowing anything about this condition was petrifying.He was 1 week old when he was taken and put in the NICU. He was in adrenal crisis, which is life threatening. Luckily they were able to act quick and they got his sodium and potassium levels evened out.

Clay will have to be on medicine for the rest of his life, and we have to watch him really closely. If he gets sick we have to stress dose him to keep him from going into crisis. We always stress dose him with medicine for immunizations, if he gets hurt, sick, and so on. It is a really big learning curve and have been pretty emotional stressful, but hopefully in time things will get easier and we will learn more about this, and be able to take good care of him and keep him healthy!

We can’t thank the Wesley NICU enough for saving our son’s life! They did everything they could to get him healthy as soon as they could. All the nurses and doctors were amazing, and we are forever grateful! Thank you for all the prayers and love you have showed up along the way. Clay Daniel Apley- Born 10/20! Come Meet Our Little Guy!

Wow it has been awhile since I have blogged! I wanted to get on real quick while Clay is napping to announce he was born on October 20th, at 6:42 pm! It was a bit of a bumpy road getting him here, but he arrived safely! He is such a sweet handsome little guy, and we are so blessed to have him as our son!

I ended up getting induced and everything was going really well, then as the day progressed, Clay starting showing distress and I stopped dilating. I made it to an 8, and I wasn’t progressing. The doctor came in and said we will give it a bit longer but if you don’t progress it is looking like we will have to do a c-section. So, we waited some more and there was no real change. Clay was still showing distress and I was still not progressing. The doctor finally made the call it was time to do a c-section.

I was petrified as having a c-section was a huge fear of mine. But, I had no choice and I wanted Clay to get here safely and I knew I had no other option but to breath deep and go for it. Luckily Adam was able to come in and be by my side. It took quite a bit of medicine to get me numbed up, but it finally worked and we were ready. The procedure went pretty quick, and before we knew it Clay was here! I got nervous cause I didn’t hear him cry at first, I was so scared something was a matter, but then he let out the loudest cry ever. It was such a special moment that I will remember forever! I was able to take a quick look at him, and they got him looked over and then came and laid him on my neck so he could touch a little bit of my skin!

Here he is 3 weeks old, holding his head up great! We have had some bumps along the way, he was diagnosed with Salt Wasting CAH, and was in the NICU for almost 1 week. They found this in his newborn screening blood test. It is a life threatening condition and luckily they got him in to the hospital very quick and he is doing better now. He is on meds and will be for the rest of his life. I will do a post about this and what happened here later. I just wanted to let you all get to see him, and finally get to meet the little guy!

Did you See the Star of Bethlehem Last Night?!

Wow I haven’t done any Faith post in quite awhile, I was thinking about that late last night! So, I thought now is the perfect time to do one! Last night I don’t know if you all knew but the last night in the west, northwest part of the sky you could see the Star of Bethlehem! Jupiter and Venus get very near to being in alignment, this has not happened in 2,000 years. Some believe that this conjunction of stars is the Bethlehem Star, that was seen after the birth of Jesus! The seeing of it last night is a sign that Jesus is Coming back soon, to some people. Other people see it as two planets aligning, and that is it. It just depends on your walk with God and the way you view things.

 

It was very bright, and such a neat thing to see! My mother-in-law actually texted us earlier in the day and told us about it. I had no idea it was happening, so it was nice to hear about it and get to see it!

I know people have been saying for years Jesus is coming soon, get ready and such. It has made people not believe the time is near, but I truly do feel the time is coming and we do need to get our hearts right with the Lord and be ready. If we are here during Tribulation time, that will be so hard, harder than I think most of us can imagine, and if we are not strong in our faith it will be even harder! I have just been feeling in my heart to get my heart right with God, and work on growing my faith closer to him. Breaking down the walls I have, healing the wounds, and become strong. So if I am faced with a trial, I turn to him and know that no matter what I will be okay, because he is with me and in the end I always win.

I have always had pretty good faith, but I just want to grow deeper. I feel that tugging at my spirit to go deeper in my walk with God. If the rapture doesn’t happen in my lifetime, what did I do that was wrong, absolutely nothing! I prepared my heart for the day to be with Jesus and my family, all that did was better myself. It made life more enjoyable and peaceful while I was here on earth! So whether you think it is End Times or not, I still think we all should try and grow closer to God, and build a stronger relationship with him! Maybe you already are very strong in your faith, hats off to you!!! I feel I am not done growing, and that is why I decided to write this post! Maybe there are a few of you out there that feel the same way as me!
